When we opened one of our concerns was where we would source our vegetables, as there weren't many organic suppliers on our doorstep. Finding ingredients that were in keeping with our attitude to sustainable agriculture continues to be tricky but we decided that to really have control over the quality of what we put on our plates we had to grow it ourselves.
We are lucky enough to grow much of our fruit and vegetables in a walled garden just outside Frome. This is part of a land regeneration project with a local landowner that will protect local wildlife and reintroduce biodiversity into the landscape. We use low input and permaculture methods that focus on soil health, that in turn provides flavour driven produce for our kitchen.
